As a previous vegetarian for 14 years, I've certainly mastered respect for the vegetable. With that said, my life partners have always eaten meat and thus, I'm no newbie to cooking with meat. I've found myself working in kitchens from as far as Israel, as trendy as Barcelona and as southern as Florida. Not to mention a high end catering company hear in Montreal. There's nothing I shy away from but I ascribe to the keep it fresh, keep is basic school of cooking.
