The essence of Italian cooking today is simplicity. Italians traditionally do not like elaborate dishes, preferring to let natural flavours of their raw ingredients speak for themselves. Variety and diversity of Italian ingredients available inspire me to create any number of delicious dishes.
The unifying feature of my cooking is my insistence to cook with high quality ingredients. Good food has always been essential to my Italian way of life. Italian cooking or “La Cucina Italiana” is one of the oldest cooking cultures in the world. For Italians eating is the major pleasure of the day.
I learnt to appreciate good Italian food from a very young age, and I have cooked from an a very young age, in preparing good for my family in our home, to producing wedding and other banquets for hundreds of Italians and visitors to Italy from numerous countries from around the world on a professional level for a number of years.
