All I cook is 100% italian. I like to vary, and I must because I only use seasonal items.
I'm from Abruzzo (the region of Madonna!) and I have learnt most of my recipes from my mother who is a sort of kitchen Goddess!
I can arrange the menu following you tastes, but my hits include: all types of italian homemade pasta (tagliatelle, spaghetti, pappardelle, lasagne, orecchiette) in any sauce, braised of stewed beef, lamb (typical of my region), veal "cotoletta".
If you really want to experience italian food, forget stereotypes; you'll get a carbonara or a cotoletta alla milanese, if you really want, but the best experience I can offer you deals with dishes whose name you probably have never heard before. But that you won't forget.
